Here is the recipe of one of the most popular and loved cold sauce around the world, the mayonnaise. With cold meat, deep fried food, french fries, on a boiled egg, in a sandwich or with sea food, this thick and creamy yellow sauce is cheap and easy to prepare. Give it a try and you might give up on that jar thing you buy at the supermarket.

Preparation time: 15 minutes

Conservation time: 2 days refrigerated


  • 1 egg yolk (preferably not straight out of the fridge, room temperature is preferred)

  • 1 tea spoon of Dijon mustard

  • 1 table spoon of white wine vinegar or/ lemon juice

  • 150 ml of oil (sunflower, canola or grape seed)

  • Pinch of salt

  • Pinch of black pepper


To mount my mayonnaise, I am using an electric whisk but it can also be done by hand with a regular whisk.

  1. In a bowl, mix your egg yolk, vinegar, Dijon mustard, salt and black pepper to prepare your base for the mayonnaise. Mix for 30 seconds to let the salt dissolve.

  2. Time to start the emulsion! The oil should be added very slowly to the mix while whisking it. If you add your oil at once, you will fail to mount your mayonnaise properly. To give you an idea, the oil you are pouring in your bowl should be as thin as a thread.

  3. Whisk until your mayonnaise has a creamy consistency.

  4. Taste it and add salt and pepper if needed.

After your mayonnaise is ready, you can also add herbs (dried or fresh) or spices to give it some extra flavor.

Below is a list of ingredients that will go well with your mayonnaise (to be used separately):

  • Tarragon

  • Basil

  • Chive

  • Saffron

  • Smoked paprika powder

  • Sriracha sauce

  • Ketchup

  • Crushed garlic
